Green Goodness

I've been busily working away to prepare for my show, but I've taken lots of time out to enjoy the lovely weather and to make yummy food for myself (and Michele, if she's home). Recently, I made the most delicious Spinach Soup. I grabbed a recipe card from the grocery store and made this super easy, super delicious soup in about 15 minutes! I've found the recipe online to share it with you all as well. Oh, it's so good. I added a dash (or five) of cayenne pepper to give it a kick & it put it over the top. Just a note of a couple changes I made, if you do decide to use the recipe I've linked here:
  1. I used vegetable stock, instead of chicken stock (of course).
  2. I used Mrs. Dash and salt instead of the special seasoning salt the recipe called for (personally, I love Mrs. Dash and use it in place of pretty much every seasoning called for in savory recipes!).
  3. I added the aforementioned cayenne pepper.
  4. I omitted the poached egg that adorns the soup when finished.
If you decide to make it, please let me know how you like it! I felt like I was eating liquid sunshine (albeit GREEN liquid sunshine)!

  1. Except for having no blender - handheld or otherwise....oh but wait. I do have a handheld mixer. Would that work on low speed? I may have to try this this weekend. It's a camping trip weekend so only the oldest and I will be home and he actually likes spinach and is vegetarian so this might work.

    I didn't know I liked spinach till I ate it fresh in a salad when I was about 25! Only ever had frozen, cooked spinach growing up and hated it. I'll let you know how it comes out. Love that color green.

    And, hey...it's COLD and rainy here today. Did you steal our warm weather?

  2. WOW! that's really green! that's why when i put spinich in everything, i chop it really fine instead of pureeing it, cuz it doesn't turn everything green. it just looks like i went overboard with herbs :)

    i'm glad you enjoyed it, but no one in my house would eat it :)

  3. I made this... sorta. I was too impatient to wait until I grocery shopped for more spinach, so I used the little spinach we had left. I miscalculated how much to use of the other stuff so it ended up being green broth. Good, but not spinachy. Next time, Michelle, next time.
